This report outlines consumer attitudes towards ethnic food in a number of formats, including takeaway; supermarket purchasing (ready-meals and sauces); and out-of-home eating. Select properties of ethnic food - such as 'spiciness', 'aroma', and nutritional value - govern consumer views of ethnic food and are, therefore, central to understanding consumers' relationships to 'ethnic' products in all formats.
